Wanted: A recipe for fruit compote / stewed fruit

    Hello!

I love a good muesli in the morning and want to start adding some cooked fruit. A bit of googling has not yielded any successful results, so I'm asking for your help!

I'm not sure of the difference between a fruit compote or stewed fruit, if any. I'd like something that is reasonably low in sugar with cinnamon. As for fruits, I'd like to use apricots, pears, apples and anything else that would go well with them.

The recipies that I've found so far all seem to use dried fruits but I'd rather use fresh ones. However there might be a very good reason for using dried fruits. Happy to have this clarified.

Ok! Any suggestions would be super!

    Cheers,
    Fiona

Just put any fruit you like in a saucepan with a little water, cook until soft. Add sugar and spices to taste.

this one is yum with ice cream or cereal or anything really!

    4 pears peeled and quatered
    1 orange sliced
    6 fresh red plums whole
    6 peaches whole
    12 prunes
    8 medium figs
(but as falguni says, any fruit will do)

    syrup

    1 cinamon stick
    2 cardoman pods
    1 clove
    1/4 bay leaf
    1 vanilla bean split
    6 black pepporcorns
1/4 cup port or red wine
    1 and 1/2 cups water
    1/2 cup honey

( i usually don't have bay leaves so don't put that it and also I substitute vanilla for the bean as they are expensive!)

    method
combine syrup ingredients and boil uncovered 5 minutes

Poach fruit in small batches in the syrup.

then reduce the syrup by simmering, if it is too thick or if you like it syrupy just use it that way.
