    Question Subtly flavoured rice??? HELP!

    I'm making Tracey's thai chicken meatballs for dinner tonight (thanks Trace!!) and since it's just DD I thought I'd just do some quick steamed vegies and some rice but don't want just plain boring rice - how can I flavour it a bit? Stock instead of water??

    I don't have a rice cooker at the moment, mine packed it in and I haven't replaced it so have to use either the stove or microwave.

    Totally hoping Cailin sees this before dinner time!!

    I was going to suggest stock instead of water when I saw the thread title.
    Or do you have any saffron?

    Or 3 Flavour Rice (carrot, lemon, mint)
    1/2 cup extra virgin olive oil
    1 onion, diced
    1 carrot, diced (1/4 in)
    1 Tbsp minced garlic
    Salt and pepper to taste
    3 1/2 cups water
    Finely grated zest and juice of 1 lemon
    1 1/2 cup long grain rice (make sure that you are using long grain rice)
    4 long skinny green onions, thinly sliced on the diagonal
    1/4 cup chopped fresh mint leaves

    Heat the oil in a pot over low heat. Add the onion and carrot - cook 10 minutes. Add the garlic, cook 3 minutes more. Season with salt and pepper. Bring the water, lemon zest and juice to a boil. Stir in the rice, reduce the heat and simmer, covered, until the rice absorbs the liquid and is tender, about 20 minutes. Remove to a bowl, add the scallions and mint, and fluff with a fork.

    This serves about 6 so maybe halve the quantities.

    I love plain steamed rice... my hubby hates plain rice.

    I always add stock... and finely chopped onions.

    Depending on what the meal is... I add peas or parsley

    Throw in some frozen veges a scrambled egg without the milk & some soy sauce for an easy "fried rice".

    It's too late for tonight but another time you could try boiling rice on the stove and when it's done stir through some butter and some parsley (either fresh or dried). It's lovely.

    I just did it with stock and it was pretty awful to be honest! LOL!!

    I add some vegie stock called 'Vegeta'. Its a dry powder.

    Oops sorry I missed this... For future reference one of my favourite rice sides is... Chicken rice. You use chicken stock instead of water, add a splash of soy, some minced garlic and ginger (about 1/2 tsp ginger 1 tsp garlic - fresh or jar) and some sesame oil. I promise you will not be disappointed!

    I use vegeta stock powder in the water when I cook both pasta and rice - gives it a nice taste.
