I make pancakes with pureed apples or pears instead of sugar, they seem to work really well and DS loves them!
I have a recipe for sugar free apple and banana muffins somewhere. I'm looking forward to bananas being affordable again. I'll see if I can find it for you.

I dont put sugar in my pancakes anyway so they are used to that and I have been using applesauce (baby food one) in recipes too lately.
I always reduce the amount of sugar in the recipe. Instead of white/castor or brown sugar I use 'rapadura sugar' which is an unrefined sugar and it is rich in nutrients. The colour of brown sugar but more powdery and less sweet. Also you can replace sugar with maple syrup. I have not had failures with replacing sugar in recipes with the above two. Goodluck!
apparently there is some concerns about those products too though. I will let you know, I just have to dig through some files. The rapadura is the best we can find at this stage.
I have used stevia but dont like the aftertaste and like ladybirdflies mentioned there has been some concerns however not sure if thats just the sugar industry trying to scare people.
I read about the rapadura just briefly last night, might go and do a bit more research. Would I find that in a health food shop?
Actually I don't like the aftertaste of the stevia either. Perhaps you could try the sugar they use for brewing - as it is recommended in the sweet poison book.
