    Cool Arancini

    I'm looking for a quick and easy recipe for arancini (preferably tried and tested IYKWIM!)

    They're Italian, rice balls covered in crumbs of some sort, sometimes with cheese in the crumbs, sometimes without. I'm looking for the "without" recipe...

    (and yes, it is for a special occasion )

    Just get some leftover risotto thats cold mix in an egg so that it sticks, stick a cube of mozza in the middle mold into a ball, roll in seasoned flour, egg and then panko breadcrumbs then reridgerate and then shallow fry. I find that if you don't add the egg chances are it will collapse. And if you use cold risotto it works best. Serve with a nice napoli saunce YUM YUM! you can double crumb them if you like but its not necessary.

    I have a specific recipe here somewhere if you want me to find it... Start off with small balls as they tend not to collapse. Make sure the risotto is thick and not sloppy or once again it will collapse.
