I always thought that was just the juices/blood etc but I'm sure someone knows for sure!
We baked some salmon a week ago and for some reason this white stuff (is it fish fat?) oozed out of the sides. It didn't look very appealing. Was the fish not fresh?

Its the protein coming out and if you see that it means that it is overcooked. It is still edible, but just a little over cooked is all.
