christmas pudding
375g seeded raisins
250g currants
185g chopped mixed peel
90g blanched almonds chopped
250g soft white bread crumbs
1/2 tsp salt
1 tsp mixed spice
3/4 cup milk
1/2 cup brandy
1 cup orange juice (approx)
250g butter melted
375g sultanas
185g prunes
grated rind of 1 lemon
1 large carrot grated
250g raw sugar
125g plain flour
1/2 tsp nutmeg
4 eggs
mix all dry ingrediants, whisk eggs,cooled melted butter, milk, brandy and juice, add to dry ingrediants and mix, fill the mixture into large basin. im not sure how big our basin is :redface:

Cover pudding top with a circle of baking paper. Cover with a double layer of foil. Secure with unwaxed kitchen string (make sure handle across the top is not too tight, or it will leave indentations). Fold the foil up over the string to ensure it doesn't touch the water during cooking.
Place a trivet or upturned saucer in the bottom of a large saucepan. Stand basin on top. Pour in enough boiling water to reach halfway up sides of basin. Cover saucepan with lid and boil over medium-high heat for 6 hours, adding more boiling as required

We do a seafood buffet and cold ham, salads etc and trifle for dessert.
My stepdad goes crazy with seafood - we do oysters (natural and kilpatrick), crab, bugs, prawns, marinated calimari and grilled fish. Washed down with lots of cold beer :D
