Mexican party foods?

Some silly woman is thinking of hosting a "Mexican Fiesta" just for fun.....
Does anyone have any wonderful ideas for food and drinks to serve?

I make this yum dip type of thing which is really filling.

Spread a can of refried beans onto a plate (makes about a dinner size plate)
empty a jar of light mayo into a mixing bowl and add about 1/2 a packet of taco seasoning (more if you are keen on it and want more flavour) mix it up and then poor over the refried beans.
Cover with grated cheese
Dice fresh tomato, cucumber and yellow capsicum (for different colours) and sprinkle over the top.

It looks great and is so yummy eaten with Doritos!
