We do cold nog. Good eggnog is just as awesome without alcohol. But if you want similar flavour go rum essence. A little at a time so not to go overboard.
My nog is egg whites to stiff peaks, then in a separate bowl egg yolks with sugar beat till pale then add cream, milk and nutmeg, then add alcohol (we add white rum), then gently fold (I use a whisk) in the egg whites. If using essence it can be added at the end.
Unless you're a complete lush (like us lol) you shouldn't need to taste the alcohol.
I swear by my nog. I've had nog aficionados tell me I make the best nog.
