I have a really yummy Tuna & Noodle Casserole recipe
Ingredients:
125g flat noodles (I just use the long life noodles)
1 tablespoon olive or vegetable oil
1 medium onion, chopped
1 medium green capsicum, chopped
1 stick celery, sliced
1/3 cup plain flour
Pinch of black pepper
3 1/2 cups milk
1/2 greated Swiss cheese (I just use Tasty)
2 x 185g tins tuna (or one big one LOL), drained and flaked
1/3 cup grated Parmesan cheese
Method:
Preheat oven to 180 degrees.
Cook noodles according to the directions on the package. Drain, rinse an drain again; return to the saucepan and cover.
Meanwhile, heat the oil over medium heat in a large saucepan.
Add the onion, green capsicum and celery and cook for 5 minutes, or until the vegetables are tender.
Stir in the flour and black pepper.
Add the milk and cook, stirring constantly, for 10 minutes, or until the mixture is thickened and bubbly.
Add the Swiss cheese, stirring until melted.
Stir in the cooked noodles and then carefully stir in the tuna.
Spoon the tuna and noodle mixture into a lightly greased 20 x 20 x 5cm baking dish.
Top with grated Paramasen cheese and bake for 25 minutes, or until heated through.
with my tuna mornay I add some curry powder & pineapple pieces...leaving out the peas but add lots of corn. I even add some of the pineapple juice when making the base. Serve with rice or pasta yummy.
I also have a tuna lasanga recipe, but that's a little more involved..PM if you want it.
60g butter
1/3 cup plain flour
2 1/2 cups milk
1 chicken stock cube (or 1tsp chicken stock powder)
1/3 cup grated cheese
425g can chunky tuna (drained)
1/4 tsp cracked black peppercorns
1 cup frozen peas
2 hard boiled eggs (sliced)
Topping:
1 1/2 cups breadcrumbs
30g melted butter
1/3 cup grated cheese.
Melt butter in pan, stir in flour and stir over heat until dry and grainy. Remove from heat, gradually stir in milk and crumbled stock cube. Stir over heat until sauce boils and thickens. Stir in cheese, tuna, peas and peppercorns, gently fold in eggs. Pour into ovenproof dish and sprinkle with topping (just mix all topping ingredients together in a bowl and spread evenly over top of tuna mixture). Bake in moderate oven for 25 mins or until brown.

haha, no worries. I literally just had to go into my sent items and hit forward and paste in your email address, took me less than a minute. Best thing is that all of the recipes are good for you and they have the nutritional info if you need to reduce your intake of fat or salt or whatever
