    chicken bolognese!
it is amazing i dont use traditional mince anymore for it.

    1 tablespoon olive oil
    1 onion, finely chopped
    1 small carrot, grated
    2 sticks celery, finely sliced
    2 garlic cloves, crushed
    500g chicken mince
410g can tomato pur?e or tomato pasta sauce
    1 teaspoon dried basil
    1 teaspoon dried thyme
1 cup flat leaf parsley, roughly chopped
    500g dried spaghetti

Step 1 Heat oil in a frying pan over medium heat. Add onion, carrot, celery and garlic and cook, stirring often, for 8 minutes or until vegetables are tender. Add chicken mince and cook, stirring, for 8-10 minutes or until browned.

Step 2 Add tomato pur?e, basil, thyme and half the parsley. Stir until well combined and mixture comes to the boil. Reduce heat and simmer for 15 minutes.

Step 3 Cook pasta in a large pan of boiling water according to packet directions. Serve pasta topped with bolognese and remaining parsley.

amazing thing about this recipe its super low fat, high iron and high fibre and yummy!

anything you would cook with beef mince, you can do with chicken for something different. I make, meatballs, spag bol, lasanga or sausage rolls.

Might be coming in a bit late on this:
I make yummy rissoles - sweet chilli sauce, fresh ginger, grated zuchini, corn, grated carrot, chicken stock cube, soy sauce and breadcrumbs.
Yummy! I love them the next day on a toasted sandwich.

I second the san choi bow. Also, you can make up burritos or tacos with chicken mince instead of regular mince.

At our house we all love chicken sausage rolls with lots of grated vegies in them and a little soy sauce for extra flavour - they make a yummy lunch.
