    Cooking meatballs???

    My son loves this and I have never tried making it. I am going to give it a go tomorrow night with the help of you guys! My MIL actually makes them without frying, has anyone done this? What is your recipe? Would really appreciate your help! Thanks

    I make meatballs that have a cube of cheese in the middle, they are so yum & i get lots of happy reveiws when cooking them for others. These ones do not need to be cooked first either, just roll up, push in cube of cheese...pop in casserole dish & pour sauce over the top & cook in oven OH they are yummy.     This is my gran's recipe - she swears that is only good if you use TOPSIDE mince lol

    Annie's Best Ever Meatballs

    500gm Topside mince (you can get this from your butcher)
    500gm pork mince (or lamb is nice too)
    1-2 eggs
    1 tbsp dried mixed herbs
    1 clove crushed garlic
    1 tsp dijon or seeded mustard
    1 grated carrot
    1 finely diced onion
    chopped parsley
    enough breadcrumbs to bring together (about 1/2-1 cup)
    1 tbsp wouster sauce

    Put it all in a bowl and get in with your hands until it is all well combined and the mince is quite 'mushy' - the kids will love helping to do this.
    Ball them up about the size of a golf ball (If you have time, put them in the fridge to set a little before you cook them) and fry them in batches in a pan on medium, you can just shake the pan and roll them around until they are brown on all sides.



    To make them without frying them you put them in the oven, and bake them in the oven at 170 until browned.


    Meatballs are super easy, quick, cheap - a great way to sneak in some veg and the kids love helping to make them too.

    Thanks, that sounds yummy. Does it matter if I don't fry it in a non-stick pan? As I only hane stainless steel pans. Thanks

    You can bake meatballs too. Don't be scared to do that. They don't take as long but if you bake them on a baking tray with baking paper, just be sure to give them a good spray of olive oil or similar to help with the browning process.

    Making meatballs tonight! Here is a ACE recipe for Swedish meatballs - delish (thanks Olive for your neverending inspiration my love!) This one is from taste.com.au

    1/2 cup (45g) purchased breadcrumbs
    1/4 cup (60ml) cream
    500g Heart Smart beef mince
    I small onion, grated
    1 garlic clove, crushed
    1/8 tsp ground allspice
    1 egg
    1/2 tsp salt
    Freshly ground pepper
    1/4 cup (60ml) olive oil
    3/4 cup (185ml) beef stock
    1 tsp cornflour
    1/2 cup (125ml) cream, extra
    Mixed salad leaves and crusty bread, to serve

    Method
    Soak breadcrumbs in the cream. Add the mince, onion, garlic, allspice, egg and salt. Season with pepper. With wetted hands, shape mixture into small balls.
    Heat the oil in a frying pan over a medium-high heat. In batches, cook meatballs until brown. Drain excess oil.
    Return all meatballs to the pan and add the stock. Simmer, covered, for 20 minutes. Remove the meatballs and cover with foil to keep warm.
    Combine the cornflour with a little water and stir into the stock mixture. Heat through until boiling. Reduce heat to low. Add extra cream and cook, stirring, for 1 minute. Pour sauce over meatballs and serve with salad leaves and crusty bread.

    I serve with rice!

    Tonight i am going to make some with beef mince, I make up my recipe but basically it is
    500gms beef mince
    1 brown onion grated - I brown it off a wee bit too
    2 garlic cloves
    1 egg
    Grated zucchini
    Grated carrot
    Season all salt
    Dash of tomato sauce
    Dash of Soy sauce
    breadcrumbs to combine

    Cook in dutch oven, once browned, remove and cook up another onion. some bacon and a can of diced tomatos. Add meatballs back in with a bit of stock/water and let it simmer for 10-15.
    Serve with rice!
