Ollie's 2nd birthday party is next Sunday and between now and then I will be super busy (I work full time and have two evenings of after-work engagements during the week and my step-sister's 40th to attend on the Saturday, plus I am determined to make the Womens' Weekly train birthday cake!).
So - how far ahead can I make chocolate crackles and honey joys??
You can get a couple of days out of them as long as they are in an airtight container and stored somewhere quite cool. I know people have frozen chocolate crackles, but can't do with honey joys.
The cake bits of the train cake can be made ahead. You can freeze the cake, just make sure it is wrapped in cloth (muslins are perfect for this) when it goes in, and that it stays in the cloth until it is fully thawed. I think you can make buttercream icing in advance, but it only takes 5 minutes so I wouldn't bother.
Choc crackles will last for a good few days in the fridge (I managed 4 days prior) and honey joys should be not to different in a cool dry place. Sounds like fun!
