I love to make mini chicken vegie pies for Annabelle. I make heaps and pop them in the freezer for nights I cant be bothered cooking, or if Clint and I are having take away once Miss A is in bed
But Im yet to come accross a nice simple pie crust that isn't to messy when Annabelle eats it.
this is what i use it is a little messy with little kids but by far one of the best ones ive done
225 g Plain Flour
pinch salt
50 g lard (the solidified fat stuff)
50 g margarine
cold water to mix, about 30 ml (approx. 2 tbsp.)
25 g caster sugar if sweet pastry is required.
1 Mix flour and salt in basin, rub in fat.
2 Using a knife to cut and stir, mix with cold water to form a stiff dough.
3 Turn dough on to a floured surface and knead lightly.
4 Roll out and use as required.
Self raising flour may be used. the pastry will have a more cake-like texture.
