    sausage casserole recipes please

    I'm looking for some sausage casserole recipes, anyone have any? The girls absolutely love sausages, so thought I'd try and do it in a casserole. Also, are there any recipes for a slow cooker? If not, that's ok.

    I use the packet mix for slow cooker cant remmeber if mcormicks or continetntal but add packet mix and a tin of tomatoes and vegies. I also add garlic and some herbs etc.

    Very easy and yummo and serve of potatoe mash

    My Mum used to make curried sausages..child friendly version. Pretty sure it had chicken noodle soup packet mix, sausages, curry and some vegies, stock and corn flour to thicken. Could easily do it in a slow cooker.
    Masterfoods also do a packet mix curried sausages and we have them with rice.

    I just use a basic tomato base (onion, garlic herbs and tinned tomatoes) chop the sausages up (or leave them whole if I'm feeling lazy) and pop them in. At the end I add baby spinach.
    Easy and yum.
    Serve with mash

    This is one of my fave slow cooker recipes.....

    Ingredients (serves 4)
    1 tablespoon olive oil
    8 lean beef sausages
    1 large brown onion, chopped
    2 garlic cloves, crushed
    2 eggplant, chopped
    3/4 teaspoon chilli flakes
    400g can diced tomatoes
    1 cup chicken stock
    1/4 cup flat-leaf parsley leaves, chopped

    Method
    Heat oil in a large non-stick frying pan over medium heat. Add sausages and cook, turning occasionally, for 2 to 3 minutes or until evenly browned. Remove to a plate lined with paper towel.
    Add onion, garlic and eggplant to pan. Cook, stirring often, for 5 minutes or until eggplant is golden. Stir in chilli and tomatoes. Cook for 5 minutes or until sauce thickens.
    Add stock and bring to the boil. Spoon eggplant mixture into slow cooker. Add sausages. Cover and cook on HIGH for 4 hours or LOW for 6 hours.
    Stir in parsley. Season with pepper. Serve with steamed vegetables and crusty bread, if desired.

    This is one I have made a lot and it is delicious and my kids and DH can't get enough. I do find it is more of a winter dish though but thats just me

    Sausage Casserole

    Ingredients (serves 4)

    * 1kg Desiree potatoes, peeled, roughly chopped
    * 40g butter, chopped
    * 3/4 cup milk
    * 1 tablespoon olive oil
    * 1 brown onion, sliced
    * 750g pork or beef chipolata sausages
    * 1/4 cup tomato sauce
    * 1/4 cup barbecue sauce
    * 1 tablespoon Worcestershire sauce
    * 35g packet French onion soupmix
    * 1 tablespoon plain flour
    * 1/2 cup grated tasty cheese

    Method

    1. Place potatoes in a saucepan and cover with cold water. Bring to the boil over high heat. Reduce heat to medium-low and simmer for 20 to 25 minutes or until tender. Drain. Return to pan. Add butter, milk and salt and pepper. Mash until smooth.
    2. Preheat oven to 200°C. Heat oil in a deep frying pan over medium heat. Add onion and cook for 3 minutes or until tender. Add sausages and cook, stirring occasionally, for 3 minutes or until browned. Whisk tomato sauce, barbecue sauce, Worcestershire sauce, soupmix, flour and 3/4 cup water in a jug. Stir into sausage mixture and bring to the boil.
    3. Spoon sausage mixture into an 8-cup capacity casserole. Top with potato. Sprinkle with cheese. Bake for 25 to 30 minutes or until cheese is golden. Serve.

    Notes & tips

    * Instead of mashed potato, you could make a pumpkin or sweet potato mash or a carrot and parsnip mash. And this recipe works equally well if you replace the sausages with small lamb loin chops.
