    Thumbs up Tomato Vodka Pasta Sauce with Seafood

    We had this tonight (a last minute throw together) and OMG it was AWESOME!

    800g good quality tinned Roma/Italian Tomatoes
    125g unsalted butter
    1 brown onion
    salt & pepper
    1 tbsp minced garlic
    2 shots of vodka
    Pasta to feed 5 (we did spaghetti)
    1 kg of Fresh good quality marinara
    a handful of roughly chopped fresh basil (I have a plant so I used that but if you don't have it you could skip it)
    Tabasco if you like it hot (DH added this to his)

    The first part of the recipe I have to credit Smitten Kitchen, which is where I got the recipe for the tomato sauce base, but I fancied it up with vodka, garlic & basil.

    Tip your tomatoes into a pot with the butter and the onion cut in half so the rings are whole. Salt & Pepper to taste. Bring to boil then reduce to a simmer and cook for 45 minutes. Stirring occasionally and mushing up the tomatoes as you go (I acutally used a plastic masher at one point). Then once the 45 minutes is up remove the onion and add your vodka and garlic and cook again till it thickens slightly just to cook the alcohol off basically. Then add your marinara mix and simmer till cooked through. Add the torn/chopped basil. Serve on cooked spaghetti with crusty bread or garlic bread. Die and go to heaven. Oh and if you want a bit of heat add as much tabasco as you like when you add the seafood.

    BUT I'll tell you the tomato sauce just with the vodka, garlic, basil sauce would be AWESOME on it's own with pasta as a quick pleb meal

    I love vodka pasta, but I make it with chicken, do not like seafood..
