    Icing Mud Cake....what icing?

    Help please.

    I've ordered a Mud Cake from Woolies for my little mans Christening on Sunday. I plan to ice it, put white chocolate shards around the edge & write his name & the date on it.
    Thing is, what Icing do you think is best for a Mud Cake. I can do butter cream no worries, but was thinking I should attempt a Ganache??? or could I use the Betty Crocker icing??? Anything that makes it easier for me?

    What are your thoughts??

    mmmm, ganache!! Put 2 parts chocolate (dark or milk) in a heatproof bowl. Bring 1 part pure cream to the boil then pour over chocolate and stir until chocolate is melted and its combined. Set aside to cool and thicken then spread on cake. Yummmmmm. Because you are boiling the cream, you can leave it out at room temp without the ganche going off. You can even make the ganache a coupe of days before and keep it in the fridge - just zap it in the microwave at 10sec intervals to bring it back to a spreading consistancy. A tip for icing too is to put the cake on a cooling rack, then ice so that all the drips fall through and the cake doesnt end up in a big puddle of icing. Omg, i want mud cake now!!

    A ganache would be really nice on it. If you wanted something really easy, the Betty Crocker ready to spread icing is very yummy!

    GANACHE! I don't think anything else goes on a mud cake Mrsb26 recipe sounds good.

    Ganache is the only way to top a mud cake - anything else just doesn't seem right. I make mine with 2/3cup choc and 1/3 cup cream, put both in a saucepan and stir over low heat until choc is all melted.

    I forgot to add too that if you want to get fancy, let hte ganache set for a little while and them put into an icing bag and you can use it for piping decorative shells etc as well.
