    EEk! Biscuit recipe without baking powder!

    Yup already started cooking (well i've softened the butter haha) and realised I have no baking powder - and of course no shops are open today, and now DS is hassling me for biscuits that I can't make because I have no baking powder!

    Does anyone have a recipe that you can add choc chips to (cos I have those) but doesn't need baking powder?

    Oh - and no I dont have any cream of tartar to mix with baking soda to make baking powder - I've already googled... LOL

    yep, hang on a tic....

    here'tis.
    Ingredients
    185g butter, softened
    3/4 cup caster sugar
    1 teaspoon vanilla extract
    1 egg
    2 cups plain flour

    Method
    Preheat oven to 180ºC/160ºC fan-forced. Line 3 baking trays with baking paper.
    Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg. Beat until combined. Sift flour over butter mixture. Using a wooden spoon, stir to combine. See notes for baking instructions and tips.

    Notes
    Place cookies 4cm apart on prepared trays.
    If dough gets a little soft after rolling, place in fridge until firm enough to handle.
    If rolling dough, form dough into a disc. Cover and refrigerate for 30 minutes before rolling.

    I've just made 3 batches (desperately trying to use all the contents of my pantry or chuck it out). One I put choc chips in, one the most of a packet of 100's & 1000's, and one some almond meal in place of some of the flour.
    They are easy and I basically form it into a log and just slice and bake that.

    Can you just use SR flour? I don't think I've ever made biscuits using baking powder!

    It does have flour in it - needs baking powder as well, and all my other recipes i looked at had it in there too - or another ingredient that I didn't have!!!

    Hmm Kim - I think I've stuffed them.. but anyhoo... how long do I cook them for?

    arrghh! Sorry mate, stepped away from the puter for a time....

    well if you haven't already I do about 12-15 - or 'by eye and smell'.

    Bet they turned out fine.

    I think they were left longer than that - when I could smell them in the next room it was time to take them out.. lol

    some of them are a leeeetle bit browner than their other friends...
