I made this the other night and it was soooo good just thought I would share
It's hearty enough to be a meal on its own and thanks to a hint of chilli would be great to get rid of a cold.

Chicken soup with chilli, mint and couscous

olive oil
1 onion finely chopped
1-2 red chillies (the long ones) finely chopped, you could add more depending on your tastes
1 tsp ground cumin
1 tsp paprika
1 tbsp tomato puree or paste
handful fresh mint chopped
100g couscous (add more to bulk up if desired)
1 small bunch fresh coriander chopped
2 handfuls baby spinach
1 handful sultanas

Stock:
1 whole chicken (approx 1.3kg)
I onion quartered
1 lemon quartered
1 bunch fresh parsley stalks
1 tsp coriander seeds or powder
1 cinnamon stick
1 large tomato quartered
1 carrot sliced


Combine all stock ingredients in a deep pot and pour enough water to cover the chicken. Bring to boil then reduce heat and simmer until chicken is almost falling off the bone (around an hour).

Remove chicken from pot and leave to cool. Remove skin, strip the flesh and set aside, discard bones. Continue to simmer broth until it has reduced slightly. Remove from heat and strain into a bowl or jug (you can also remove lemon and cinnamon and wizz everything else in blender create a more flavoursome soup). Season with salt and pepper.

Heat oil in the stock pot and add chillies and onions, cook until onions begin to colour add cumin, paprika, mint, tomato paste and sultanas and stir until combined. Add stock and bring to the boil, gradually stir in couscous then reduce heat and simmer until couscous is cooked through. Stir in chicken. Add coriander and baby spinach at the end and serve when spinach has just wilted.
