    Dinner in no time

    Two weeks from now, DH will be working 4pm-9pm.
    I will be picking up the boys from my mums, or auntys, after work and it will be six by the time I get home.

    What can you suggest for dinner thats fast?
    At the moment we eat at 6 and DS(4) is in bed by 730 so I feel like its all going to go pear shaped.

    Other than my slow cooker, what other things can we have for dinner that take less 30 mins to be ready?

    Things I've thought about that I could make and freeze ahead are pies, lasagne, quiche, pasta sauce

    Anything else?

    When mum was on arvo shift she used to cook dinner before she left for work and leave it in the fridge for us. It was often things like chops and veggies too. Maybe see if DH can do that for you before he leaves for work?

    Soups. Especially now that it's winter. Anything with potato in it doesn't freeze well though.

    I've had great success freezing risotto, particularly the broccoli and cheddar one I used to make. A lot of other rice based dished freze well too.

    I am not a big fan of them but I guess if you were desperate you could get some of those latina fresh pasta and sauces combos. They are superquick, you could serve up some salad with them and/or bread or something.

    Talk to Turk, she makes dinner the night before once the kids are in bed and then they eat that the following night.
    My sister does this too.

    She cooks tea once the kids are in bed, plates it up and puts it in the fridge for the next night. Her DS eats his tea as soon as he comes home from school then has a snack later on.

    I wish I was that organised.

    When desperate I make this:

    Large tin of tuna, some cooked pasta, tin/frozen corn/peas, grated carrot mixed with a bit of cream cheese or grated cheese. Quick, easy, yum and resonably healthy. My kids love it too. Or I do an omlette with chopped ham/bacon, frozen/tinned corn/peas and cheese served with a salad.

    Womans weekly print a few cookbooks called 'meals in minutes' 'afterwork cookbook' etc. Might be worth a look...

    Thanks. I forogt about tuna bake, mine is similar but with rice and has a can of celery soup in it.
    DH wont eat cooked tuna but I figure he wont be home and I know it freezes well.
