    Thumbs up Chickpea patties with caramelised onions- you must try this!

    I Tried something different for dinner last nite Chickpea patties with caramelised onions. Was so delicious i got it out of this amazing vegetarian cookbook with the best recipes in it so i thought id share this one as it is a MUST try i will definently be making this a regular thing to make.

    Im not much of a vegetarian cook but this wasnt to difficult and one of the best meals ive had in a long time

    Ingredients- Serves 4

    1 T olive oil
    1 red onion, finely chopped
    2 garlic cloves
    1 T ground cummin
    2x 310g tin of chickpeas
    30g/1/3 cup sunflour seeds
    1 large handful of chopped coriander
    2 eggs lightly beaten
    75g/ 2/3 cup besan (chickpea) flour (i just used normal plain flour as i didnt have any)
    Oil for frying
    Rocket to serve

    Caramelised onion
    40G of butter
    2 red onion thinly sliced
    3 T of soft brown sugar

    In the recipe it says to serve with rocket and plain yogurt,
    but i served mine with an aioli where i just used a good quality mayo and minced garlic and a bit of lemon juice, i found it went really well with the combination of flavours there was.


    1. heat the oil in a frying pan, Add the onion and cook over medium heat for 3 min . Add garlic and cummin and cook for 1 min. Allow to cool slightly

    2. Blend the chickpeas, sunflour seeds, coriander, egg and onion mixture in a food processor untill smooth. Fold in flour and season. Divide the mixture into 8 portions and, using floured hands, form into patties. heat 1cm of oil in a frying pan and cook the patties in two batches over medium heat for 2-3 min on both sides.(or untill firm) Drain on paper towels. keep warm

    3. To make caramelised onions, melt the butter in a small frying pan and cook the onion over medium heat for 10 min , stirring occasionally. Add sugar and cook for about a min, or untill caramelised. serve with yogurt or as i did aioli and rocket.

    Mmmm I love stuff like this! Will deff try it, thanks (and I'd also go with aioli, I could eat that by itself lol, yum!)
