    Dinner for one (again) what should I have?

    I hate going to the effort of cooking a 'proper' meal for just me, like something quick and easy especially since it's too hard to cook something complex/time consuming with DD around.

    Last night it was just me as DF went to the chiropractor, today he's gone to Wagga and won't be back until late so am on my own for dinner again tonight.
    Last night I made chicken wraps, last week I had tomato soup when DF wasn't here for dinner. Tonight I don't know what to have, throw me your suggestions!

    Omelette
    Pita bread Pizza
    Tuna/Chicken/Beef Salad
    Curry + Rice

    Is there anything your DH hates? It may give you a chance to have something you wouldn't normally.

    Omelette
    Toasted Sandwich
    Scrambled eggs on toast
    Soup

    I am regularly on my own for days or a week at a time!

    I have things that DH doesnt like or quick easy things

    Tuna Bake
    Rice with flavouring and tuna and vegies mixed in
    Scrambled eggs on toast
    Nachos
    sausages
    Chops
    Take away!!!
    lantinna pasta
    microwave meals
    Slow cooker (chicken curry, sausage casserole, soup etc just make smaller amount)
    chicken parma

    Egg & Chorizo Burrito w/cheese... Noms. I had this last night and it was awesome. Tuna Pasta for one. Some oil & a few anchovies once they are melted add some garlic. Then add a tin of tomatoes and a small tin of tuna. Stir through till cooked. Toss through a few capers and pour over your favourite pasta with a sprinkling of parmesan. And die and go to heaven.

    Roast a Lamb shank w/ some veg for a roast for one.

    I make a really yummy asian-ish veggie soup with noodles:


    all approximate measurements
    teaspoon of minced garlic, teaspoon of minced ginger, teaspoon of chilli (or all to your liking)
    about 1/4 of a carrot sliced finely
    1/4 zucchini sliced finely
    small broccoli florets
    small cauli florets
    red capsicum sliced finely
    1-2 mushrooms sliced finely
    1 'cake' 2 min style noodles
    1/2 tsp sesame oil
    1 tsp oil
    chicken/veggie stock (enough to cover all ingredients)

    Cook garlic, ginger and chilli in sasame oil and oil until fragrant. Add hard veggies and cook for 1-2ish mins. Add all veggies and noodle cake and cover with stock. Cook until noodles are soft. ENJOY!!

    I was going to say baked potato too. Mmm....

    And if you have a ramekin, why not put some fruit in there and make a little mini crumble? That's pretty low effort, high reward.

    Yeap defintiely my favs for when I am by myself...
    Baked Potato
    Scrabled Eggs
    Fried Rice, keep the leftovers for lunch tomorrow
    Homemade custard and fruit
