Our fav meal is vietnamese spring rolls. We grill and chop up some vege nuggets (like Frys) then roll them in dipped rice paper with cashews, tomato, mango, hoisin sauce, lettuce and coriander. It is to die for!
My girls have just had 2 bowls of this.
Spinach and ricotta ravioli, with mashed vegies tossed through and vegie sausage through too!![]()

We also have roll-your-own sushi nights, where we just lay out on the table with rice, nori, ginger, carrot, mayo, avocado, marinated tofu, soy, wasabi, etc, and we just roll as we go. SO easy, a little messy, but heaps of fun!
We do the same with burritos - onion, cumin, corn, beans, capsicum, tomato and lime juice. Served at the table with tortillas, mashed avocado, and tofutti cream cheese (dairy eaters can use sour cream, cheese, etc) and have a great time.
Vegie food is ace fun! Good on you!
