Try it for breakfast with 1/2 cup thinly sliced apples, 1/3 cup raisins & 1/2 teaspoon cinnamon. Add during the last 5-10 mins of cooking. Serve with milk or cream (I use natural yoghurt) and sweeten with honey or raw sugar.
You could also use fruits like dates, apricots or prunes.
I was introduced to quinoa for the very first time in a sensational lentil salad the other day...I asked the person who made it, apparently she cooked the lentils (green) for a while, then added the quinoa towards the end, then added some fresh chopped herbs, oil, vinegar, etc...delicious. Really nice. I wondered why I'd never eaten it before.
I used to use it to make stuffed peppers. I would cook it and then mix it with cooked ground beef, chopped tomatoes, chopped peppers, salsa and some taco seasoning, then stuff into green peppers, top with cheese, then bake and serve with sour cream.
Sadly I can't eat Quinoa any more as I have developed an intolerance and it makes me violently ill.
