I made these this morning, so easy, and so awesome!
I didn't really measure quantities, but that makes it just as easy:
About a cup of spelt flour (increase for greater quantity)
Psyllium husk - about 10% of the amount of spelt flour. Just guess. You can't use too much.
Soy milk
Apple juice.
So I mixed the spelt and psyllium so that it was evenly distributed. Then, alternate soy milk and apple juice in small splashes, mixing til you get the right consistency.
Pan fry on a medium heat - the come out perfectly round and beautifully golden, and better than my rgular pancakes! Yum!
Oooh pancakes. So how did they go sticking together? When we make vegan pancakes we just substitute the egg for 'no egg' and milk for soy milk. They taste great but don't often bind well enough. How were yours?
They were perfect! They were so so so easy, an better than any others I have ever made!
I did leave it for about 5 minutes before cooking to let the psyllium do its binding thing.
