Ok experts I have my first ever mud cake in the oven...Im very surprised at the difference in texture of that and a normal cake.
Im using the cake on sunday for DD1's 2nd birthday
How do I know if its turned out ok? can you tell just by looking or do I need to cut a bit off?
I dont want to cut into it on sunday and find its no good.

It should still turn out OK. It may need a longer cooking time, but treat it like any other cake and test with a skewer to see if it is done. If you really want to test it, get an apple corer and take out a piece and see what it is like and if it is fine, just poke it back in and no one will be any the wiser.
Made cakes taste pretty blah the day they are made, they taste better a day or two later. So don't worry if it seems crumbly or dry... it will get better over the next few days
mud cakes usually taste the best on day 3, for chocolate mud cakes the chocolate and the coffee intensifies as the days go by making it richer. With the white mud cakes the sugar and chocolate get richer.
