I found a chicken nugget recipe the other day and thought I would try it. I was demonstrating a blender and one of the things I do is make bread crumbs, so I took with me some old sourdough bread and made bread crumbs with that. When I got home I made some mayonaise and then I also ground up some linseeds. So here goes:
4 slices sourdough bread - made into bread crumbs using a blender or food processor
2 egg yolks
2/3 cup olive oil
pinch of salt
2 tsp white wine vinegar
3 chicken breasts
1 tbsp linseeds ground
1 cup plain flour
First, put the egg yolks in a food processor, add the salt. Slowly drizzle olive oil until it thickens up then add a bit quicker but not too much. Once you have added all the oil, add white wine vinegar and blitz for a second. Put mayonaise in a bowl, and bread crumbs mixed with linseeds in another bowl. Cut up chicken to fit what size you want the nuggets to be.
On your counter put chicken, flour in a bowl, mayonaise and bread crumbs mix, dip and cover chicken in each and then bake in your oven on 200 for 10 minutes then turn and bake for a further 10 minutes or until golden on both sides.
It took me 30 minutes total to make yummo chicken nuggets!!! YAY!
YUMMO! We do the mayo chicken nugget thing too, great idea to make it yourself! Another thing we do is add fresh parsley and parmesan to the crumbs, although I know you'd have to do sans cheese
