    Question Non-butter cookie recipes please !!!!!!!!!!

    Hi all,

    Well that's just embarassing i only now realised i have put on the most threads in the cookie/biscuit area

    (looks like someone has a bickie addiction )

    Anyway, i thought i would have a go at biscuits/cookie recipes without butter ... So do any of you lovely ladies have any recipes

    Non-butter cake and slice recipes too if you like will do right about now ... Yep anything !!!

    TIA i will eat my rice crackers in the meantime until i recipe some no-butter recipes

    You can use non dairy margarine ( nuttelex) in place ofthe butter. I do and you can't really taste a difference

    I too replace it with nuttelex. If you are looking for lower fat content, you could half the amount of nuttlex and use sweet potato for the other half... it will add the moisture and texture you may be missing?

    I use rice bran oil for a chocolate cake that doesn't use butter.... but I can't find the recipe right now! Sorry!

    yeh so true, i was whinging on FB that i had no butter to make some cookies and couldn't be bothered going out just for butter so wanted to ask if anyone had recipes that i could bake without butter (and to be honest it would be good for me especially since i have put on weight over Winter to half the fat content )

    Christy with a kitchen like that in your avi i need to come bake at your house, it looks so divine

    So ladies where are the recipes ... any will do pretty please

    Stir-n-Drop Cookies


    2 large eggs

    {2/3} cup vegetable oil, more for oiling glass

    2 teaspoons vanilla

    1 teaspoon grated lemon zest

    {3/4} cup granulated sugar, divided

    2 cups sifted all-purpose flour

    2 teaspoons baking powder

    { 1/2} teaspoon salt
    Heat the oven to 220.

    In a mixing bowl, beat the eggs, using a fork. Stir in 2/3 cup oil, the vanilla and lemon zest. Reserve 1 tablespoon sugar; add the remaining to the oil mixture.

    Sift together the flour, baking powder and salt. Add to the egg mixture.

    Drop the dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheets. Stamp each cookie flat with the bottom of a glass dipped in the reserved sugar, continuing to dip the glass as you prepare the cookies. (Oil the glass before dipping in the sugar.)

    Bake for 8 to 10 minutes. Remove the cookies at once from the cookie sheet.

    If you bake the cookies one sheet at a time, stir the mixture between each batch.

    Makes 60 thin 2-inch cookies, 50 calories each
