    Inspiration needed for lunch tomorrow.

    My cousin and her husband are coming for lunch tomorrow along with my Uncle and Aunt

    I've just gone to butcher and got some lamb so I'm going to make a lamb curry of some sort (afghan or korma) and serve it up with rice.
    I'll make a cucumber yogurt salad too.

    What else?

    I have a pumpkin - cous cous salad with pumpkin? Is it hard to make?

    I might just buy a cake for after.

    oh oh cous cous salad with roast pumpkin is yum and easy!!

    1 1/2 cup cous cous
    1 3/4 cup chicken stock
    1/4 cup pine nuts
    1/2 pumpkin
    2 cups baby spinach (or thereabouts)
    1 clove garlic
    2 tbsp olive oil
    1 tsp oregano
    1 lemon
    salt & pepper
    180gm(ish) fetta or goats cheese

    I chop the pumpkin in bite size pieces and put it in a bowl and sprinkle salt, pepper and oregano on it with 1 tbsp olive oil. Toss until its coated and roast it in the oven around 200 for 20 minutes or until softened. Add the pine nuts for the last 3-5 minutes. Put the cous cous in a bowl and pour over boiling chicken stock. Stir quick and cover, leave for 5 minutes and then take off cover and toss with a fork. In a small bowl/jar combine juice from the lemon and 1/4 of the lemon rind, salt & pepper, clove of garlic crushed, 1tbsp olive oil and mix well. In large serving bowl, mix together the baby spinach, roast pumpkin and pine nuts, and cous cous. Mix together and pour over dressing. You can once cooled toss in a few chunks of feta or goats cheese.... nommmmm

    Thank-you for the recipe. I've been googling and lots of them look really complicated and involve capsicum.
