Cookie recipes to freeze please!

I would like some biscuit dough recipes that I can freeze and defrost as needed. Now that the kids are going to childcare once a week, I would like to give the some fresh homemade snacks for them. They can't have chocolate in them, and preferably not too much dairy as DS is sensitive. He can have a little, like butter and so forth, but not too much!
So hit me with your freezable cookie dough recipes please!
