    We had no fetta so we left it out and added chick peas and a handful of blanched green beans. Yummo.

    Tinks, I buy the Citrus Ainsley CousCous and make the thing on the back of that. But I omit the onion... is AWESOME! Espeically with grilled lamb! YUMMO! I have it for lunch at least once a week!

    cook your couscous, dice some steamed sweet potato, dry roast (or pan fry) some pine nuts, with some raisins/currants/sultanas (I like currants best, but whatever your preference) and then stir them all together, with a little olive oil.

    if you need some extra flavour, you can use crushed fresh basil, or a little lemon or lime juice, or some semi dried tomatoes.

    YUUUUUM!!!

    eating it with fresh baby spinach leaves is the best.
