If they still have the roots attached you can pop them in a tin can filled with dirt.
I usually just keep lemongrass in the crisper, it lasts aaaaages.

Yep, if they still have roots pop some in some dirt or better still potting mix (trim 3/4 of the foliage off first). You can also store them in the fridge (make sure it's not set to the coldest setting or they might get frost damage)... pop the bottoms (roots/stems) in a container of water first. In cool wet weather like this you'll get a good strike rate if you choose to plant it outside. You don't have to plant the whole thing... just separate the most vigourous looking part.

Wrap them in muslin, separately, then store them in a plastic bag in the fridge. I usually get 10-12 days out of a bunch doing it this way.

Wash them, then roll them in a clean fresh chux, or muslin as Audax said.
Wrap them up in cling wrap or freezer bags, and store them in your crisper.

The lemongrass you can keep in gladwrap in the fridge, or as is in the crisper.

I'll try the muslin/wrapping method next time I have some fresh herbs... I have to admit though that in cooler weather like this i also like popping them in a vase in the kitchen like a bunch of flowers and letting their smell fill the house!
