    What do YOU put in your omelettes?

    I've just started making omelettes for breakfast in the mornings, and I'm looking for suggestions. This morning we had diced mushroom and spring onion, I meant to put diced bacon in as well but forgot

    What kind of different things have you found work/don't work in an omelette?

    Spinach - make sure excess water is removed
    Fetta
    Sundried tomatoes
    Olives

    Yummy!!! That is sooper organised for breaky!!!

    (take it as read there is cheese in each of these omelettes - grated, parmesan or fetta)

    mushrooms, sliced (loads of them) - this is my fave
    grated or thinly sliced zucchini +/- onion
    cooked potato +/- onion
    tomato, capsicum, mushroom
    chorizo, onion, tomato
    and one I haven't made but reckon would be YUM - smoked salmon, onion, sprinkle of dill & capers

    A typical omlette for us has capsicum, onion, mushroom, tomato, cheese & baby spinach.

    lots of mushrooms and serve with sweet chilli sauce

    fine and you can cabbage, grated carrot, spring onion and beanshoots YUM

    My current fav is tomato, ham, avocado and cheese.. I don't know if this is because I am pregnant but I can't get enough of them.

    Ohhh these are sounding so yummy! Can you put stuff like celery, or grated carrot in them? Could you make sweet versions as well, with cinnamon or nutmeg?
