    Pavlova

    Dh's birthday is tomorrow & he likes Pavlova so each year that is what is cake is..

    I have never made the base before, just store bought. But I have all the ingredients to do it BUT am I safer just buy a store base or is pretty straight forward/easy to do myself? I have a large gas oven that I personally think cooks fast... Any tips/warnings

    Very low oven....very slow cook.

    Nigella's recipe is fool proof.

    Make sure the meringue is stiff after all the sugar is added you should be able to tip the bowl over your head without it falling on you.

    I second Nigella's recipe And all the other tips LOL.

    Leaving it to cool in the oven, with the door open a crack can be helpful. Good luck, I'm sure he'll love it! I personally think a homemade pav beats a store bought one hands down

    Yeah - go home made - not that hard to do, but make sure your oven is down low. Definitely go further than you would think with beating the egg whites really stiff (and you can check whether all the sugar is dissolved by rubbing between your fingers - should be nice, smooth and glossy).
