    Potato salad recipes.... please!

    I have a hankering for potato salad.... mmmmm!! But I've never made it and I'm looking for a good recipe. How long do I need to cook the spuds for and what variety of spud works best? And the sauce/dressing stuff... what do you use? I don't like a sweet dressing, I think I had a potato salad once which was dressed with sour cream and seedy mustard??

    So hit me ladies.... how do you make your Spud Salad???

    Whole Egg Mayo
    American Mustard
    Sugar, Salt, Vinegar
    1/2 tsp Curry Powder
    Eggs
    Potatoes
    Corn
    Spring Onions
    Parmesan

    Mmmm.... my mouth is watering, Rouge!! What sort of spuds? And do I cut them before or after I cook them? I like them unpeeled, do you usually peel the spuds? Corn... I hadn't thought of corn! I'll add that to the shopping list! Thanks!

    I normally cook them peeled. But I would cut them before cooking. I usually boil them in already boiled water for about 12-15 minutes (or untill as tender as you like). With potato salad always salt the water. Mix the dressing up to your liking and then pour over the hot potatoes so they absorb the flavours. Then gently fold through the other ingredients.

    Thanks Rouge! I would have cut them after cooking and waited for them to cool before dressing! Mmmm.... off to the supermarket now.
