how do you know what is normal toddler behaviour??

whats normal in terms of tantrums/hitting and screaming...

DD2 is very different to DD1 who was and still is pretty placid, doesnt hit (has tantrums) etc...
im wondering if what DD2 is like IS just completely normal or a little extreme

There is no such thing as "normal" IMO. Everyone is different. My two are as different as chalk and cheese. Compared to my eldest, my youngest is a hyper, screaming feral (most of the time) but when I look at other kids at daycare, it is actually my eldest that is too placid, quiet and sensitive (if that is possible).

As long as your mummy instinct isn't saying/screaming that something is wrong, then all is good IMO and it is just a time you plod through until your consistency in parenting pays off and then everyone asks what is your secret.
