    As healthy as can be (if possible) birthday cake recipe needed - please

    So its my DH's birthday tomorrow and he has recently started going to the gym and is on this serious health kick (to the point he is actually making his own salad to take to work - he has always grizzled when I made salads for dinners {cause I much prefer salads over cooked vegies - so } utterlone making them for lunch too)

    Anyway...this week he has started this new healthy diet as instructed by his personal trainer - though its not a detailed menu - its just like the do's and do not eat things.

    So it finally occurred to me today that the usual chocolate cake or cheesecake shop cake is probably not the best option .

    Is there any other healthier cake options? If so -please share the recipe.

    Carrot cake with a cream cheese frosting?

    Or stick with the chocolate cake and just make mini cupcakes (bite size)

    My husband is a fanatically diet/exercise obsessed personal trainer, so I completely understand I usually make chocolate mud cupcakes and decorate them with just a little chocolate ganache for him, or make chocolate mousse (we have a caterers Nestle one that has virtually no calories in it) and put a little frangelico or something in it, then decorate with just a little grated chocolate. SOMETHING that he likes to help celebrate, but just on a smaller scale than getting a big cake and then have the temptation of it sitting in the fridge for days to come or eating too much in one sitting. Remember, it's still ok to have treats sometimes, and what better time than your birthday!

    Does he like Banana Cake???

    3 smushed bananas
    3/4 cup sugar
    1 & 2/3 cup of wholemeal SR flour
    1/4 cup apple sauce
    2 eggs

    Mix. Bake for an hour at 180 degrees.
    You can swap the bananas for stewed apples (not too soft) or any other fruit. Exchange the smushed bananas for about a cup and a half of whatever fruit.

    you can also add nuts, sultanas, chocolate.... whatever...it's the best and easiest cake recipe out there!!!! (my opinion anyway!)

    Makes 8 good sized muffins, just cook for 25 mins instead of an hour.

    DH usually won't eat cake but for his birthday he relents.
    Like Bec I think it's better to make something small that you can finish on the day instead of a big cake.
    DH's favourite is pavlovas so I just make a few mini pavs and pile them high with fruit.
    How about pumpkin and ricotta muffins? They're yummy.

    Thank you for all the suggestions.

    Still not sure what i'll make...i've woken up (from next to no sleep) feeling sick- so don't think i can make it down to the shops to get extra ingredients.

    The carrot cake with cream cheese would've been nice- but all the recipes i found i had 1 ingredient- that varied each time from each recipe- missing (eg- one had sour cream, another was almond meal). Also don't have any cream cheese either. The banana cake sounds yummy too- i'm just missing the apple sauce...though i do have some apples which i possibly make some of my own- hmm will see how i go this morning. I've even got all the ingredients to make a pavalova except cream.

    So might have to stick to the chocolate cupcakes...unless anyone has any more recipe suggestions?

    Oh and Tanstar- i would still love it if you could share the berry sponge recipe, please. I know i don't have any berries- but it sounds delicious- so might give it a try for the next family birthday cake.

    So thanks again and any other ideas (including recipes if possible)- please keep them coming.
