    making fish stock

    i bought a small amount of prawns today for dinner (200g) and was wondering if i can i make a small amount of fish stock with the heads/shell/bits etc..??
    and how, not much water, do i add anything else, how long to boil for

    200g isn't alot of prawns, but you could make a small amount, as you said.

    I would add the shells/heads etc to a pot with some onions, garlic, ginger, carrots, celery (or whatever you have on hand), herbs (fresh) if you have them and some peppercorns and a little bit of salt (not too much). add enough water to just cover everything by about an inch.

    Simmer (don't boil), for about 40mins and skim all the scum that comes to the surface while its simmering.

    Once 40 mins is up and if it has a nice aroma and colour to it, it is ready to strain into a clean container, freeze for up to 3 months.

    I forgot to add, that you can put the stock into ice cube containers and freeze, once frozen, add them to a container and you can use them to flavour stir fry's or rice dishes..

    I like leeks for fish/shellfish stock rather than regular onions, white wine and a teeny saffron thread is nice too!
