    Help me with Dinner tonight PLEASE!!!

    Right, i am so over thinking about wat to do for dinner, i wander around the shops continually not knowing what to get.
    I am totally lacking motivation and ideas (i guess that comes with being 40 weeks pg)

    So hit me with your ideas...

    Preferably chicken meals, but can do pork or beef mince (but not steak or anything like that)
    I have a 3 year old and a 13 year old to cater to - but neither are particularly fussy eaters.

    my fave no motivation chicken meal is

    1 pre cooked chicken from the deli
    loaf bread
    cheese slices
    lettus if i have enough energy to cut & wash it.

    and there u have it, chicken sangas, you can put it all on the table and they can make there own aswell!
    (i was very dissapointed to find my safeway deli is getting the floor redone so no chickens the other night!

    Have you tried just a maggi mix?? All you have to do is add water to the mix, and add meat, and you've got a meal!
    I think maggi puts them out..... could be another brand. Could be continental...
    We eat them all the time. There's quite a few. Apricot chicken, malaysian chicken, beefy mince.

    Have you got a slow cooker?? We got one recently and with DD its the best $25 we ever spent!
    You can just get a packet mix for that as well.

    Is the chicken fillets???

    If so, you could slice them into thinner fillets, lightly coat with flour and seasoning (I also add a little smoked paprika)

    Saute a finely diced onion and garlic to taste (I use olive oil and a little butter for flavour)

    Add floured fillets. Sometimes you need to add a little more oil at this stage. Lightly brown (dont overcook)

    I add a cup or so of white wine at this stage, but it is optional.

    Add large can of Carnation Light and Creamy evaporated milk (or cream). Add lots of sliced mushrooms, finely sliced spring onion. Salt and Pepper to taste.

    I usually add some mustard (either dijon or hot english) to taste. Maybe some more paprika.

    Heat through on low heat. Making sure mushies and chicken are cooked through. Sauce will thicken but if you want it thicker, add a tsp or two of cornflour.

    Serve with mash or rice or noodles and green veg.

    It's a kind of a chicken scallopine (with apologies to anyone Italian out there who is probably saying - "That is nothing like a chicken scallopine!!"

    Beef Mince - a kind of a Chow Mein thing

    Chop onion, saute with garlic in a little oil. Add beef mince. Brown.
    Add pkt of chicken noodle soup, chopped carrot, celery, diced zucchini, bean, peas (whatever else you have/want).
    Add cup or so of rice (depending on how much meat you are using. if it is less than 500gms, use less rice)
    Add soy sauce to taste. Salt and pepper.
    Add cup of water or stock.
    Add sliced cabbage.

    Put lid on. Cook on low heat until rice and cabbage is cooked. Stir occasionally to make sure it doesnt stick.

    Add more soy if you think it needs it...
