so I made this tonight and it is amazing!!! first attempt and its great. also very good for fussy eaters(like me) who don't eat many vegies.. i put 6 different ones in this but you can choose whatever ones you like.
about 700 gr chicken mince(i minced my own)
1/4 cup soy sauce
2 Table spoons sweet chilli sauce
1 Table spoon vinegar
1 1/2 cup chicken stock
1 Tablespoon crushed ginger
1 Table spoon crushed garlic.
2 cups shredded cabbage
1 cup shredded bok choy
1 capsicum diced
1 carrot grated
1 zucchini grated
spring onions chopped
rice noodles
brown mince in a little oil and garlic and ginger.
add the carrot, zucchini and capsicum along with the stock.stir and cover for a couple of minutes.
add the cabbage, bok choy and spring onions.
combine the soy sauce, sweet chilli sauce and vinegar along with a little cornflour to thicken.add to the wok.
soak the rice noodles in hot water to soften and then add to the wok. stir in and cover for a few minutes.
