    What's your favourite stuffed eggplant (or other vegie) recipe?

    Tonight I feel like stuffed eggplant for dinner. I was thinking rice or cous cous, garlic, coriander, mince, veggies and maybe some feta? I don't really know and need some good ideas or recipes. What do you do?

    I made a sensational veggie moussaka the other night. With eggplant, potato, tomato basil sauce and a béchamel sauce.

    I do have a great stuffed eggplant recipe, let me see if i can find it....

    You're killing me here lady!

    Ok Stuffed eggplant;

    2 Eggplants
    2 T olive oil
    1 onion- chopped
    2 cloves garlic- crushed
    4 tomatoes- chopped
    2 t tomato paste
    2 T dill leaves
    2 T flat leaf parsley
    2 T currents
    2 T pine nuts
    1 T red wine vinegar
    150g finely grated kefalotyri cheese ( i use parmesan as i don't know what that cheese even is. :lol)

    Cut eggplant in half lengthways and cut out the flesh leaving 5mm behind as a shell.
    finely dice the flesh and toss with 2 t of salt and drain it in a colander for 30 min. (i never bother.) squeeze out excess moisture.
    Heat ! T oil in pan, add eggplant, cook 5 min. remove to bowl. Heat remaining oil and fry off onion and garlic, add toms, paste, dill , parsley, currents, pine nuts and vinegar. Stir and cook for 8-10 min. Mix in eggplant and cheese, season.
    Spoon into shells, sprinkle with cheese and cook for about 30 min. I have done them on a covered BBQ or in a moderate oven.

    You could easily add couscous into the mix too.

    Will be back with moussaka..... it's lunch time!
