    Question about fresh beetroot

    I want to cook a fresh beet in a risotto tonight - should I cook it first and then add it in to the risotto when the risotto is nearly ready, or is there some way to cook it all together, without having a totally pink risotto? Will it be soft if I do it all together? It will be diced into small pieces.

    Definitely have to cook it first if you don't want pink risotto. Can put it in raw of it is is cut up small-ish and it will cook. Bur your risotto will be pink. It's nice if you roast in in the oven first.

    I was going to suggest roasting it first too - don't forget to wear gloves so you don't have pink hands!

    So wrap it in foil and bung it in the oven? Should I put olive oil or something over it first? I haven't baked one before. Trying to find tips, but Google is not my friend today

    Yup, I was going to say yum, roast it
    You can eat it raw, so if it doesn't get completley cooked it's still yummy.

    Oh, I want roasted beetroot now...

    Yup, what the others have said- roast it first, and then cook like a pumpkin risotto

    zucchini and parmesan... we have too many zucchinis and I just like parmesan LOL. I'll grate the zucchini- it won't do much flavour wise, the beets and cheese will take care of that, but it will bulk the veggie value

    Oh yum. Sounds beautiful JM.

    It's nearly ready. It's been in for an hour, but it was still a little hard in the middle. It was a bloody big beet!
