    Snapper... What to do?

    So I bought some prawns for a paella last night and then while I was there, the shop had some nice looking snapper so I bought some!

    Problem is - I have no idea what to do with it! I've bought a nice big fillet.

    I can just do the crumb and pan fry but I thought I'd see what other possibilities exist! Any suggestions??

    I say keep it simple. We eat a lot of snapper and it doesn't need much help, it's an awesome, delicate fish on it's own. I'd recommend just using a bit of seasoning and gently pan frying the fillets. Bread crumbs really aren't needed. Friends of ours make a beautiful salad whenever they serve snapper and it's basically baby spinach leaves, shredded fresh Parmesan, avocado, red onion and pine nuts with a simple balsamic dressing. Yum!

    Thanks Taurean! Hadn't thought of just letting the fish speak for itself.

    Snapper pie. There is a restaurant that has it as it's specialty with creamy mash and smoked tomato. It is absolutely heavenly!!!
