I also make muffins with grated veggies, bacon and feta/tasty cheese in them. Just put in whatever takes your fancy, grated carrots, zucchini, mushrooms, pumpkin, sweet potato....works well with mini quiches too.
Or you can do a mixture of sweet fruits and veggies, like apple and pumpkin. Sweet potato and pears. Banana and zucchini.
I also often make choc chip muffins with grated veggies like carrot and zucchini.

It is full of recipes that hide vegies...they are made with vegie puree's in them.
Even choc Brownies made with hidden carrot and spinach.
Awesome for getting your kids to eat even more veges.
