    Double yolkers!

    Were given an unexpected bounty of 3 doz double yolkers from someone who works at an egg farm
    Sick of omelettes, scrambled eggs and quiche already! Have plans of making vanilla slice on the weekend and wondering what else I can make that contains yolks. Ideas greatly appreciated!

    Egg Custard, Custard Tart, baked egg custard (just saw a really yummy recipe for baked egg custard on taste)
    Egg Nogg
    A friend at work was talking about how she makes her lasagne, she is Italian. She uses eggs as one of the layers.
    Salad with boiled eggs
    Mayonaise

    Carbonara recipe from Consuming Passions website

    1 packet spaghetti (500g)
    Pinch nutmeg
    8 slices of bacon (cut into strips)
    1 tbsp butter
    1 tbsp olive oil
    2 whole eggs
    2 egg yolks
    1-2 tbsp cream
    1/2 tsp black pepper
    1/4 tsp white pepper
    2 tbsp grated parmesan cheese
    1 cup fresh parsley (chopped)
    2 cups broccoli florets lightly blanched
    in boiling water for two minutes
    and drained (optional)


    Cook the spaghetti in boiling water with a grating of nutmeg.

    While the pasta is cooking, crisp the bacon in a large frying pan. Pour off excess bacon fat and turn down the heat. Add the butter and oil and stir through.

    In a large bowl, whisk two whole eggs and egg yolks, then stir in the cream, black and white pepper, the grated parmesan and parsley.

    Once the pasta has cooked, drain and toss into the pan with the bacon and turn the heat back up to medium.

    When the spaghetti has started to steam, remove from the heat and pour over the egg mixture.
    Add some broccoli if you wish and stir through, until the egg mixture has a smooth consistency.

    Add some more parmesan cheese and parsley and serve onto a warm bowl, with a side salad.


    Wine suggestion: Pinot Noir
