Also known as Quark, has anyone had a go at making this?
I just put 1 ltr of cultured Buttermilk (from the stupormarket) into my easy-yo canister with boiling water etc and left it overnight. I am just straining it now and I really hope it works. Apparently it is super yum and really low fat.

Ohh! Do tell how you went! I've been hanging out to buy some quark, but it's just waaaayyyy too exxy in Australia! If it worked well, could you post the instructions, pretty please?
Well..... I think it worked LOL!. Certainly what I have resembles very very thick cream.
Do you have an Easy -yo? You would may need to get one (but they are super awesome, so you need one, and they are only about $30 )
All I did was buy a litre of cultured buttermilk, from Woolies, $4.50 odd. Poured it intothe the Easy -yo container, filled up the thermos with boiling water and left it overnight. I then Pulled it out and strained it in a chux lined sieve for about 6 hours and I was left with the cheese. You then just fluff it up with a whisk, I think you can also add some whipped cream.
I prob end up with 500mls of cheese from it, the same as when we do out thick yogurt (same directions as above) so you loose alot of volume.
However, we have a good cheat with the yogurt, we just make 1 litre of powdered milk and add a tablespoon of existing premade yugurt, to introduce the bacteria and put in thermos overnight. It works perfect and only costs a dollar a batch. o I am going to try some plain skim milk with about 100mls of buttermilk as a starter.
I will let you know how it goes. It tastes a little like yogurt, but not nearly as tart, I can see how it would substitute for cream really well. You wouldnever guess how low fat it is either.
