    Shortbread biscuits?

I know that Christmas is coming around, and you can easily buy Shortbread Cookies/Biscuits but they're usually $5 for a packet of 8.

I was wondering if anyone had a recipe to share to make shortbread biscuits?
Oh, and I'm not cooking them because of Christmas, I'm cooking them cause they're my latest craving

Made some yesterday, 225g butter 1/3 cup sugar and 2 cups of flour. The trick is to beat the butter until it is super fluffy then add the sugar and finally the flour. Refrigerate the dough for an hour them cook in a low oven. The author said to freeze the shortbread to make them taste more buttery.

The best shortbread recipe I have ever used is on the side of the McKenzies Rice Flour box - it makes perfect buttery shortbread every time.

I made shortbread last night , it's an old recipe that our grandmother used during the war,

    12 0z plain flour
8 oz Butter (room temp best)
4 oz Caster Sugar (i use rapadura)

Rub all ingredients together until they form a dough. Press into a tin until it's nice and smooth, cut into bars and ***** with a fork (i put an almond on each piece)

    Put in oven 160 C for 30-40minutes

THis is So SO SO quick and easy and everyone RAVES about this when they eat it!

I have used wholemeal wheat, white flour, spelt flour and different sugars, it always works!!!

Yum, I love shortbread! And Babyluv just gave me a great excuse to bake some - we're going to make a big batch so DS can give it to friends and family as Christmas gifts!

black-rose and ladiebirdflies - roughly how many pieces do your recipes make?

And does anyone know how long it will keep for before going stale?

I know, but I can't claim it. Babyluv suggested it in another thread a few minutes ago

it keeps for a while in an airtight container, but i can't think exactly how long!

my gran always used to swear that it was always best if made by someone with cold hands.

i use the recipe on the rice flour box too

Last year I made short bread for Christmas pressies. I bought a 3 size star cookie cutter and added choc chips in one batch and some cocoa in another batch and then dusted them all in icing sugar. Then i put them into baskets filled with scrunched tissue paper and wrapped them in cellophane.

They looked fantastic and everybody loved them!
