Drool, MIL makes the most awesome pp icecream, but i think she just soaks her pud in some form of alcohol then mixes it in with a tub of vanilla ice cream
We do similar Skybie and then we put it inside a carved out panettone and serve slices...mmmmm!
Basically you just soak the mixed fruit in the alcohol of your choice (we find citrussy works well with the panettone thing) and then mix it through softened icecream with half a cup of toasted slivered almonds, refreeze.
i know you wanted to do it yourself but thought i would mention i noticed cold rock are doing an ice cream pudding in case you are interested in that and have one near you
I order 4L from Dairy Bell, and I send DH to pick it up after work.
I don't even have to wash my imaginary ice cream maker.
