Double the recipe - cook for how long?

It's our street Christmas party tonight and I am making scalloped potatoes. I am using my normal recipe but have doubled it. Do I still cook for the normal hour or if you double something, do you need to cook for longer? I am not the world's best cook so I am a bundle of nerves about either poisoning the neighbours or serving them up raw potatoes

your cooking time will be longer, but that depends on the depth of the dish you are using. I would be inclined to use a fork or skewer and poke the potatoes after an hour or so of cooking and check if they are ready that way, maybe cook at a slightly than lower temperature so you don't burn the top of the bake. The other thing you can do is par boil the potatoes before you slice them, that will cut your cooking time down by quite a bit

if you are really nervous split it into 2 dishes and cook at the same time, for the same time.

I think you are one step closer to success just by thinking of this. I never cook anything for longer lol With something like potatoes just go by testing them and when they are soft
