    Sausage & Vegetable Rogan Josh

    1/3 cup Rogan josh paste (I make my own recipe to follow)
    500gms peeled and cubed potato
    1 large Zucchini sliced in thick rings and quartered
    1 large onion
    400gms peeled and cubed pumpkin
    2 medium carrots sliced
    10 thick sausages cooked and sliced thickly
    2 cups beef stock

    If starting with raw sausages cook through in pan. Set aside and allow to cool. Add onion to pan and cook till translucent. Add Rogan josh paste and let the paste cook off until you can smell the amazing aromas. Add the veg. I add everything except the zucchini which I add once the other veg are softer. Then add the sausage back to the pot and the stock and simmer till the veg are soft. Serve with basmati, fresh coriander and some yoghurt if desired. This recipe FILLS my large Le Chasseur. And feeds a family of 2 adults two teens and 2 kids for two nights. So this is a great meal for big families. Also very budget conscious.

    Rogan Josh Paste Recipe

    I make all my own curry pastes for two reasons, cost and I can monitor the heat. And I can make curry whenever I like as I always have the ingredients.

    1 teaspoon of diced ginger
    2 tablespoons minced garlic (or 6 cloves)
    1 tsp ground corriander
    2 tsp ground cumin
    1 tbsp paprika
    1 tsp chilli powder (or to liking I omit for the kids)
    1 tsp salt
    1 tablespoon tomato purée
    2 tbsp vegetable oil
    Juice of half a lemon

    I blitz mine in my rocket blender but you can just mix it together if you prefer. Feel free to play with the flavours. I do this often with curry pastes. If I have any jar roast capsicum I will also add a few pieces of this to the past and blitz. You can also add cardamom to taste as well.

    We have so many posts about what to do with sausages so I thought this might come in handy. Also great for leftover BBQ sausages.

    How much curry paste does your recipe make? And how long will it keep for in the fridge?

    I'd say it make about 1/2 - 3/4 cup

    I generally use it all at once so I've never had to keep it. But you could definitely freeze it. I do this all the time with my green curry paste.

    Awesome, hadn't even thought of freezing the paste! Since there's only two (and a bit) of us, we'd have to halve your recipe AND freeze the leftovers too!
