    Ratatouille.....

    Not the movie

    I made some the other day - well i think it is Ratatouille - I will post my recipe and want to see if anyone has any suggestions/variations because I am LOVING it hot or cold and trying to eat healthy means I am getting loads of veg in without the carbs or cals!

    1 large onion - softened in a tinsy bit of oil with a good shake of chilli flakes
    1 large eggplant cut up and added next
    Cooked these down quite a bit
    Then added
    1 large zucchini
    2 red capsicums
    7 tomatoes.

    Cooked it all down for around 45 mins til it was all softened and joooshy. Eat at will

    Next time I think I will blanch the toms and capsicum and take the skin off them? I keep getting bitter and stringy bits that annoy me. What else could I add? What do you put in??

    Have you salted your eggplant? Some eggplant can be bitter and salt them then rinsing and patting dry can remove the bitterness.

    Oh cool thanks hun will try that, the eggplant was mega overpowering while cooking too and I was worried it wouldn't taste very nice but it turned out great- maybe I shouldn't mess with it haha!!

    We add carrot and garlic to our ratatouille. It is also nice to use baby eggplant. We usually make heaps and freeze family size serves as it freezes and defrosts quite well.

    We will also blend it and use it is bolognaise/lasagna and tomato based sauces, great way to get the vegies into the kids.

    Best breakfast ever = left over ratatouille in an oven proof dish. Heat it. Get it back out. Break eges in it. Put it back in over for a few minutes until eggs are done to your liking. Go to paradise.
